March Cocktail: Minty Pear Mojito

Woohoo St. Patrick's Day! Gotta love a day where the color of choice is green. So obvi I wanted to make a green cocktail to celebrate the day, but I wanted it to still be light and fresh, unlike some other drinks of choice on St. Paddy's (I'm lookin at you, green beer :P). I found this recipe on The Cookie Rookie and was instantly sold - mint, pear, mojito??? YES PLZ!

Ok ok I know mojitos are NOT Irish,  but this one is green so that's good enough!!

Isn't it such a pretty drink? It tastes just as good too. 

I was also psyched that I got to use my new rattan cupholders from Boticalove - aren't they darling?


MINTY PEAR MOJITO COCKTAIL

 

INGREDIENTS (Serves 4)

2 cups peeled and chopped pears
3/4 cup fresh mint leaves (5-7 mint leaves per drink)
3-4 tablespoons agave nectar OR simple syrup (equal parts sugar and water, heated on the stovetop)
4 tablespoons fresh lime juice
5 ounces white rum or vodka
6 cups club soda

INSTRUCTIONS

1. Place the chopped pears, mint leaves, agave nectar, and lime juice in the bottom of your pitcher or glass and muddle the ingredients to combine the flavors.

2. Pour in liquor and club soda and stir slowly to combine.

3. Pour over ice and serve! Top with more fresh mint and lime wedges.

4. Enjoy!
